The tenderloin is a piece of meat from the back, lodged between the lower ribs and spine, more specifically, above the kidneys and below the sirloin, hence the name of tenderloin. Means corresponding to the piece sirloin beef or pork, as in other animals the muscle is so small that it is stripped separately. The tenderloin is seen in the kitchen a selected piece of meat prepared in various ways.
